How is fermented greek yogurt produced?
A multiple-step process called fermentation, which takes place in the laboratory, produces a wide range of fermented foods such as sour cream, yogurt and kefir. Fermentation is the process of converting carbohydrates to alcohol or carbon dioxide gas. The process takes place in a microclimate under anaerobic conditions. This prevents bacteria from growing, and it also allows the enzymes in the food, which chemically change the food but do not interfere with its nutritional value, to act more slowly and evenly.
The process involves three steps: lactose fermentation, osmotic dehydration and microorganisms fermentation. In the first step, lactose is converted to lactic acid. In the second step, moisture is removed from the food by osmotic dehydration. The final step involves the growth of microorganisms such as bacteria and yeast.
These microorganisms break down proteins, carbohydrates and other compounds into smaller components that can be used as food for human beings. The process of fermenting foods results in several different by-products such as flavours, colourings or aromas. During this process, live strains of bacteria break down lactose into lactic acid and carbon dioxide. The lactic acid acts as a preservative and survives cold temperatures.
