Bridgitte's Giddy Yo Cacao Powder
A best-seller, GY cacao powder is made from the highly prized Ecuadorian Arriba Nacional bean (aka cacao Arriba, or cacao Nacional). Arriba is a fine flavoured bean characterized by fruity and floral notes, and unique to Ecuador. Our cacao powder is certified organic, Rainforest Alliance certified, common allergen-free, non GMO, naturally vegan and delicious!
The beans are hand-selected, fermented and dried to perfection, then lightly roasted, crushed into nibs, the skins removed or 'winnowed' and ground into a liquid. The liquefied cacao mass is transferred to a mechanical press where the majority of cacao butter is removed. The remaining mass (‘cake’) is ground into a fine powder and packaged for your enjoyment. Our cacao is lab tested, clean and pure, is not “Dutch” processed nor alkalized in any way. Giddy Yo Cacao Powder is low temperature processed from start to finish to maximize quality and taste while maintaining nutritional integrity.
Our farmers harvest fully mature ripened pods from trees grown in mineral-rich volcanic soil. The plantation from which we source is known for their high quality low cadmium fine flavour cacao. Our supplier has developed and implemented an ongoing free education and training program for the cacao harvesters and processors. It is important to us that the Ecuadorians responsible for supplying our unique cacao are well taken care of; we believe in people over profits. We lab test each lot of raw materials to ensure our high standards are met or exceeded.
